Whole Orange Cake

Bake at 350º for 30-35 minutes. 

Ingredients

  • 2 whole oranges (one for the cake and one for the glaze)
  • 1/2 cup butter (1 stick) at room temperature
  • 2 large eggs
  • 1/4 cup whole milk yogurt
  • 3/4 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the Glaze

  • Juice and zest from one orange
  • powdered sugar 

Instructions

  1. Wash and scrub your oranges. You’ll use almost two whole oranges, including the peel. The second orange will be used for orange zest and orange juice to make the orange glaze.

  2. Trim the ends of one orange and cut into about 12 wedges, trimming any of the white pith which can be bitter. Pulse in a food processor until you have a pulp-like mixture. Set aside. 
  3. Cream the butter and sugar until light.
  4. Add eggs and yogurt and beat until combined. 
  5. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  6. Add in the orange pulp mixture and half of the flour while the mixer is on low. Scrape down the bowl, and add the remaining flour and beat until fully combined. 
  7. Spoon batter into buttered loaf pans and bake for 30-35 minutes. 
  8. Allow to cool completely before glazing the cake. 

Notes

To make the glaze, mix powdered sugar and the juice and zest of one orange. Spread on top of cakes.
