How to Make Chocolate Truffles

We made these chocolate truffles using the recipe in the cookbook by The Cook’s Atelier. They also posted this recipe on their Instagram.

Ingredients

  • 1 lb. of good, high-quality chocolate (at least 70% cacao)
  • 1 cup heavy cream
  • Unsweetened cocoa powder for dusting

Instructions

  1. Chop the chocolate into small pieces.
  2. Place the chopped chocolate in a heat-proof bowl.
  3. In a small saucepan, heat the heavy cream to just before it boils.
  4. Pour the hot cream over the chocolate and stir with a rubber spatula until the chocolate becomes velvety smooth. 
  5. Let it stand at room temperature for an hour or until firm.
  6. Sift the cocoa powder into a shallow bowl.
  7. Using a spoon, scoop some chocolate and roll it in your hands until it forms a ball. It will be sticky.
  8. Roll the truffles in the cocoa powder until coated. Place the balls on a parchment-lined baking sheet.
  9. Refrigerate until set. Then place the truffles in an airtight container and refrigerate for up to two weeks.

Notes

Cook time includes 1 hour of cooling until forming the truffle balls and rolling them in cocoa powder.
