This healthy and delicious Meyer lemon vinaigrette salad dressing recipe is a great way to start the New Year on a positive note.

Ingredients

  • Zest from 2 Meyer lemons
  • 3/4 cup plus 2 tablespoons (from about 6 lemons) of freshly squeezed Meyer lemon juice
  • 4 teaspoons Dijon mustard
  • 2 tablespoons champagne vinegar
  • 1 garlic clove finely grated using a microplane grater
  • 2 teaspoons sea salt
  • 1 cup good quality extra virgin olive oil

Instructions

  1. Add the lemon zest, lemon juice, Dijon mustard, champagne vinegar, garlic, and salt in a small bowl, and whisk briskly until combined.
  2. Slowly pour the olive oil while vigorously whisking until the ingredients have emulsified.

Notes
