Our weather has been rainy and cold, but that has not stopped me from thinking of dinner on the patio and picnics on the beach. This simple recipe is one that I go to over and over again. What I love about this dish is that it’s best at room temperature. I can make it ahead and serve hours later. For picnics, I’ll pack it into a large Weck jar and give a shake before serving and then add the walnuts.
Green Bean Salad
- Total Time: 15 minutes
2 pounds fresh thin green beans or haricot vert
1/3 cup walnut oil
2 tablespoons fresh lemon juice
Salt & pepper
1/2 cup walnuts, toasted and chopped
Cook beans in a large pot of salted boiling water, uncovered until crisp-tender. About 6 minutes. Drain and rinse in ice cold water. Whisk together the walnut oil, lemon juice, salt and pepper and pour over green beans. Add walnuts and serve at room temperature.

They are these little tins of car freshener scents that have names like La Jolla Lemon, Capistrano Coconut, Laguna Breeze, Newport New Car, Monterey Vanilla, Coronado Cherry. If it’s true what they say about scent being closely linked with memory, then these should make us all homesick for California. Adding them to the Easter baskets!
