Add rolled oats, shredded coconut, ground cinnamon, ground ginger, salt and stir to combine dry ingredients.
Add melted coconut oil, maple syrup, molasses, and vanilla extract to the dry ingredients, stirring to incorporate.
Pour onto parchment-lined baking sheets and spread evenly.
Bake for about 30 minutes, rotating the pans every 10 minutes. Stir the granola halfway through the baking process to prevent burning. (*see note below)
Once the granola is out 9of the oven, add the dried cranberries and crystallized ginger.
Notes
*Molasses can burn very quickly, so it’s important to bake at a lower heat and watch closely. Make sure to rotate pans to prevent burning!
