Gingerbread Granola (A Sweet Little Neighbor Gift)

Ingredients

  • 5 cups rolled oats (one 42-ounce container)
  • 1/2 cup shredded coconut, unsweetened 
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger 
  • 1 teaspoon sea salt
  • 1/2 cup dried cranberries
  • 1/3 cup crystallized candied ginger, chopped
  • 3/4 cup coconut oil, melted
  • 1/3 cup pure maple syrup
  • 1/4 cup molasses (Grandma’s Molasses)
  • 1 teaspoon vanilla extract

Instructions

  1. Add rolled oats, shredded coconut, ground cinnamon, ground ginger, salt and stir to combine dry ingredients.
  2. Add melted coconut oil, maple syrup, molasses, and vanilla extract to the dry ingredients, stirring to incorporate. 
  3. Pour onto parchment-lined baking sheets and spread evenly.
  4. Bake for about 30 minutes, rotating the pans every 10 minutes. Stir the granola halfway through the baking process to prevent burning. (*see note below)
  5. Once the granola is out 9of the oven, add the dried cranberries and crystallized ginger.

Notes

*Molasses can burn very quickly, so it’s important to bake at a lower heat and watch closely. Make sure to rotate pans to prevent burning!
