Avocado Smash on toast consists of only a few ingredients, so the quality of the bread must be amazing. Using Idyllwild Bread really made this a great quick lunch.

2 thick slices of good bread
1 large ripe avocado
red pepper flakes
Scoop out the avocado into a bowl and mash with a fork
squeeze a lemon into the bowl
add a little sea salt
toast the bread
spread each slice with half of the avocado mash
drizzle with good olive oil and sprinkle with red pepper flakes
I’m not sure when avocado toast became a thing, but I only know how to make it the rustic way. I can’t for the life of me cut an avocado into perfect slices, but either way, I love it. It has simple ingredients and the only tricky part is having a ripe avocado on hand. I can keep bread in the freezer, lemons keep for weeks, and I always have salt, red pepper and olive oil.
