A California tuna sandwich like they made at this little sandowch shop on PCH in Dana Point, CA.

Ingredients

  • 2 jars of tuna in olive oil
  • 1 carrot shredded fine on a box grater
  • 2 hard boiled eggs chopped
  • 1 lemon
  • 1/4 cup mayonnaise
  • 2 perfectly ripe avocados
  • 4 soft sandwich rolls
  • Salt and pepper

Instructions

  1. Add the tuna into a bowl, leaving some of the oil, but not completely emptying the oil into the bowl. 
  2. Shred the tuna with a knife and fork
  3. Add the chopped eggs and carrot
  4. Add salt and pepper to taste, and squeeze 1/2 lemon into the salad mixture.
  5. Mix together and spread on one side of each roll, top with slices of avocado. 
  6. Squeeze 1/2 lemon over the avocado and more pepper.
