I made this lemon olive-oil cake for Madeline’s study group. It was from Gourmet Magazine that I found on Epicurious. Perfect with a pot of hot tea on a cold January afternoon. Super easy and so delicious!
Yesterday, I had the pleasure of having 6 classmates of my daughter here to work on a “team project” and I prepared my home made classic mac n cheese and they loved it so much. How marvelous that cake looks! Good luck to all the test takers~

I have never heard of olive oil cake, I always find olive oil a bit overpowering but I can see how it would balance well in a squidgy sponge cake.
