Green Bean Salad with Walnuts

Our weather has been rainy and cold, but that has not stopped me from thinking of dinner on the patio and picnics on the beach.  This simple recipe is one that I go to over and over again.  What I love about this dish is that it’s best at room temperature.  I can make it ahead and serve hours later.  For picnics, I’ll pack it into a large Weck jar and give a shake before serving and then add the walnuts.

Green Bean Salad

Ingredients

2 pounds fresh thin green beans or haricot vert

1/3 cup walnut oil

2 tablespoons fresh lemon juice

salt & pepper

1/2 cup walnuts, toasted and chopped

Directions

Cook beans in a large pot of salted boiling water, uncovered until crisp-tender.  About 6 minutes.  Drain and rinse in ice cold water.  Whisk together the walnut oil, lemon juice, salt and pepper and pour over green beans.  Add walnuts and serve at room temperature.

My Friday Favorites –

I’m always intrigued by professional athletes and how they got there.  I read this post about Kristi Castlin on My Domain.  It makes so much sense, but sometimes it’s good to hear it again, at any age.

Do you know about the little painter Iris Grace?  Every time I see a painting by Iris I am so moved.

Have you tried Bombas?  I’ve always known that socks need to come in more than one size fits all.  I mean how could my daughter and I wear the same size sock when Madeline is a 5.5 and I’m a 10.5?   Bombas come in sizes, thick or thin, plain or colors–you get the idea.  They are so comfortable.  And one pair purchased = one pair donated.  I’m wearing their invisibles right now.  They even have an Easter Basket Four-Pack!

Have you seen these California Scents?  They are these little tins of car freshener scents that have names like La Jolla Lemon, Capistrano Coconut, Laguna Breeze, Newport New Car, Monterey Vanilla, Coronado Cherry.  If it’s true what they say about scent being closely linked with memory, then these should make us all homesick for California.  Adding them to the Easter baskets!

And some Springtime Lush Bath Bombs in Madeline’s Easter basket.  There’s just nothing like a an $11–I mean a Lush bath!

I might be changing out my front porch planters for these from Serena & Lily.  I love everything in the new catalog!
